For Valentine's Day I made my Valentine Raspberry Peanut Butter Kiss Cookies. I used the Betty Crocker recipe below and adapted it a tad. I adore peanut butter cookies, so it's not a surprise that I would drool over this recipe. I've tried the original recipe, but I must implore you to try this with Hershey's limited edition of Raspberry Chocolate. It's delicious!! I love the smooth hint of raspberry mixed with chocolate.
Note to self: stock up on Hershey's limited edition kisses.
Ingredients
1/2
cup granulated sugar
1/2
cup packed brown sugar
1/2
cup creamy peanut butter
1/2
cup butter or margarine, softened
1
egg
1 1/2
cups ll-purpose flour
3/4
teaspoon baking soda
1/2
teaspoon baking powder
Heat oven to 375°F. In large bowl, beat 1/2 cup granulated sugar, the brown sugar, peanut butter, butter and egg with electric mixer on medium speed, or mix with spoon, until well blended. Stir in flour, baking soda and baking powder until dough forms.
Bake 8 to 10 minutes or until edges are light golden brown (I only needed to bake for 5 minutes) Immediately press 1 milk chocolate candy in center of each cookie. Remove from cookie sheets to cooling rack.
I advise you to unwrap your kisses while your cookies bake. I took a creative approach while waiting for my cookies.
